Prawn Jambalaya

Serves 2; Preparation 10mins; Cook 35mins. 1 tbsp rapeseed oil,  1 onion chopped,  3 celery sticks sliced,  100gms wholegrain basmati rice,  1 tsp mild chilli powder,  1 tbs ground coriander,  1/2 tsp fennel seeds,  400gm can chopped tomatoes,  1 tsp vegetable bouillon powder,  1 yellow pepper roughly chopped,  2 garlic cloves chopped,  1 tbsp fresh thyme
